Customized the template by our own , like adding or deleting text field

As I understand it and as I would personnaly need it, it would be the possibility to write custom text while creating a new quote/invoice in a field that would appear at a custom place defined in template.
For example, a description/title field which would be set to appear on top of the articles table.
