You should be able to set the default carrier for a customer. Then any order you ship, will already have the correct carrier.
Manually selecting the carrier can lead to errors. If the carrier was linked to the customer then the process would be smoother and errors could not occur.
The particular requirement can be fulfilled with the help of automation feature

We have a functionality called 'Automation' which will meet your requirement. To do that first, you have to create a 'custom field' in an Invoice or Sales order and set the workflow rule for that.
You can set the rule as once a particular customer has been selected, the shipping carrier will get automatically updated.
